It tastes amazing when served with your choice of stuffed paratha recipe, but can also be served with dal and rice. This pickle will go well with anything and everything – we like to eat it plain with ajwain paranthas too!


Normally this kind of Rai ka achar (mustard pickle recipe) require around 5 to 6 days and need to be kept in sunlight to fully prepare, But my instant quick and easy version of this pickle is ready in just few hours and it even does not require to be kept in sunlight.

This pickle is made with fresh carrot, radish and cauliflower. The spices used in this Gobhi Gajar Mooli pickle are similar to any traditional Indian Pickle Recipe but has the extra flavours of radish, cauliflower and carrot in it.

Why is this pickle a winter season favourite in India? the main reason behind this is that vegetables like carrot, radish, and cauliflower are readily available during the season of winter. You can also use other seasonal vegetables like turnip, beetroot to create similar kinds of pickles. But the crowd favorite has always been carrots and cauliflower versions.

There are many different recipes to make this mustard pickle quick recipe (rai ka achaar) but this is my mom’s recipe with a few variations of my own.

This Carrot Radish Cauliflower Pickle stays good for about one month. If you are living in a warm, humid or hot climate, then I suggest to keep this Cauliflower Carrot Radish pickle in the refrigerator.

If You walk into any village home in Punjab in early December then you’ll see garlands of cauliflower and radish drying in the sun. Gajar Gobhi Mooli Achaar is that essential condiment on the Punjabi table at all meals throughout the winter.

Aloo paratha, Aloo Pyaz Paratha, Stuffed Bathua Paratha, Makka Paratha, or Methi Paratha for breakfast – bring on the achaar!!!! Makki ki roti and sarson ka saag for lunch – where’s the achaar? Dal chawal for dinner – mix in some achaar. It’s everywhere – in different versions.

Gobhi Gajar Mooli ka Achar Recipe: A Quick spicy Cauliflower Carrot Radish Pickle (Gajar Gobhi Muli ka Achar) made with seasonal vegetables and aromatic spices, is the quintessential winter favorite!!!! Ingredients
  

  • Mustard Oil – 4 tbsp
  • Carrot – 500 grams (chopped)
  • Radish – 500 grams (chopped)
  • Cauliflower – 500 grams (chopped)
  • Grounded Rai – 3 tsp
  • Asafoetida (Hing) – ¼ tsp
  • Coriander Powder – 3 tsp
  • Red Chilli Powder – 1 tsp
  • Turmeric Powder – 1 ¼ tsp
  • Amchur Powder (Dry Mango Powder) – 1 ½ tsp
  • Salt – 3 ½ tsp (or as per taste)

How to make Cauliflower Carrot Radish Pickle | Gajar Mooli Gobhi ka Achar | Gobhi Gajar Mooli Achaar Recipe with step by step photos:

  • First, chop the cauliflower in medium florets. Peel and then chop the carrots and radish in 1.5 to 2 inches batons or sticks.
  • Further rinse the vegetable and drain the excess water.
  • Now add chopped gajar, mooli, gobhi in a big bhogana/utensil and add 2 tsp salt.
  • Mix well all the vegetables.
  • Cover the utensil and keep aside for 7-8 hours. If possible then stir once in between 7 to 8 hours.
  • After that strain the excess water from the vegetables with the help of strainer.
  • Once the vegetables are dried, then proceed to the next step.
  • Further heat a wok / kadhai on high flame and add mustard oil.
  • Now add mix vegetables, Grounded Rai, Asafoetida (Hing), Coriander Powder, Red Chilli Powder, Turmeric Powder, Amchur Powder (Dry Mango Powder), 1 ½ tsp Salt.
  • Mix well all the vegetables, spices and coat it well.
  • Cook the vegetables only for 1-2 minutes.
  • Now Switch off the gas. Please don’t over cook the vegetables.
  • Let it cool and stir in between.
  • Gobhi Gajar Mooli ka Achar or Cauliflower Carrot Radish Pickle is now ready to be served.
  • Finally, enjoy gajar muli gobhi ka achar immediately or store in an airtight container and enjoy for a month when refrigerated.
