Basically, this homemade pasta Recipe is a fusion recipe that is prepared with narrow elbow-shaped macaroni pasta, some Indian spices, and veggies of your choice like onion, tomato, capsicum, carrot, beans, etc. It’s a Spicy version of the Macaroni Recipe.

Elbow-shaped macaroni pasta is a variety of Pasta. This Indian style desi Macaroni pasta can be prepared with any shape of pasta like elbow-shaped pasta, Penne pasta, Fusilli Pasta, Farfalle Pasta, Rotini Pasta, spaghetti,, etc. but nowadays elbow-shaped macaroni is much more popular.

Pasta Dish is originally from Italy and is served with parmesan cheese but in India, this has been adapted and improvised with different flavours. That’s why it’s a homemade version of a dry macaroni pasta recipe.

  • Macaroni (elbow-shaped pasta) – 2 cup
  • Garlic – 4 cloves (finely chopped)
  • Onion – 2 (finely chopped)
  • Green Chili – ½ tsp (finely chopped)
  • Ginger Paste – 1 tsp
  • Tomato – 2 (finely chopped)
  • Capsicum – 1 (finely chopped)
  • Asafoetida (Hing) – A pinch
  • Oil – 4 tsp
  • Oregano Seasoning – ½ tsp (click here for recipe)
  • Black Pepper Powder – ¼ tsp
  • Kashmiri Red Chili Powder – ½ tsp
  • Maggi Masala or Garam Masala – ½ tsp
  • Tomato Ketchup – 2 tsp
  • Vinegar – 1 tsp
  • Coriander Leaves – 2 tbsp (finely chopped)
  • Salt – 2 tsp (adjust as per your taste)

Note: you can add any vegetable as per your taste or choice like carrots, green beans, cauliflower, capsicum, baby corn, broccoli, potatoes, green peas, etc.

Ingredients
  • Macaroni (elbow-shaped pasta) - 2 cup
  • Garlic - 4 cloves (finely chopped)
  • Onion - 2 (finely chopped)
  • Green Chili - ½ tsp (finely chopped)
  • Ginger Paste - 1 tsp
  • Tomato - 2 (finely chopped)
  • Capsicum - 1 (finely chopped)
  • Asafoetida (Hing) - A pinch
  • Oil - 4 tsp
  • Oregano Seasoning - ½ tsp
  • Black Pepper Powder - ¼ tsp
  • Kashmiri Red Chili Powder - ½ tsp
  • Maggi Masala or Garam Masala - ½ tsp
  • Tomato Ketchup - 2 tsp
  • Vinegar - 1 tsp
  • Coriander Leaves - 2 tbsp (finely chopped)
  • Salt - 2 tsp (adjust as per your taste)
Instructions
  1. Take 3 ltr of water in any utensil or pan and place it on flame and bring it to a boil.
  2. When water starts boiling add 2 tsp oil, 1 tsp salt, and mix well.
  3. Further, add 2 cups of macaroni into it and cook for 10 to 12 minutes or till the macaroni is 90% cooked i.e they should have a slight bite to them.
  4. Stir at regular intervals to prevent macaroni pasta from sticking at the bottom. (different brands of pasta may vary in size and cooking time)
  5. Strain off the macaroni with the help of a strainer.
  6. Pour cold water to stop the cooking process, and stir once.
  7. Drain and transfer them to a big plate. keep aside.
  8. Heat up a Kadai/wok and add 2 tbsps of oil.
  9. Once the oil becomes hot add a pinch of Asafoetida (Hing).
  10. Further, add 4 small finely chopped garlic cloves and Saute till the garlic is light brown.
  11. Now add finely chopped onions and cook on medium-low flame till the onions are translucent and keep stirring often.
  12. Further, add 1 tsp ginger paste or freshly grated ginger, ½ tsp green chilli and mix well. Saute them for few seconds.
  13. Now add finely chopped tomatoes and mix well.
  14. Cook them for 2-3 mins on a medium-low flame till they soften and become pulpy.
  15. Now add finely chopped capsicums or any other vegetables, salt, and mix well.
  16. Saute the veggies for 2 minutes or till veggies are half cooked.
  17. Add red chilli powder, black pepper powder and Maggi masala or garam masala, tomato ketchup, oregano seasoning, salt, and vinegar. Mix well.
  18. Finally, it’s time to add macaroni and mix gently, coating the masala sauce and macaroni well. Cook for 2 minutes and keep stirring often.
  19. Add some finely chopped green coriander leaves into the masala macaroni and mix gently.
  20. Turn off the flame.
  21. Finely, Steaming hot Macaroni Pasta or Indian Pasta or Masala Pasta is ready to be served.

Step by Step Recipe

How to cook macaroni | Vegetarian Pasta | Masala Macaroni Recipe | how to make macaroni pasta at home with step by step photos:

  • Heat up a Kadai/wok and add 2 tbsps of oil.

  • Once the oil becomes hot add a pinch of Asafoetida (Hing).

  • Further, add 4 small finely chopped garlic cloves and Saute till the garlic is light brown.

  • Now add finely chopped onions and cook on medium-low flame till the onions are translucent and keep stirring often.

  • Further, add 1 tsp ginger paste or freshly grated ginger, ½ tsp green chilli and mix well. Saute them for few seconds.

Masala Pasta Recipe

  • Now add finely chopped tomatoes and mix well.

Masala Pasta Recipe

  • Cook them for 2-3 mins on a medium-low flame till they soften and become pulpy.

Vegetarian Pasta Recipe

  • Now add finely chopped capsicums or any other vegetables, salt, and mix well.

  • Saute the veggies for 2 minutes or till veggies are half cooked.






  • Add red chilli powder, black pepper powder and Maggi masala or garam masala, tomato ketchup, oregano seasoning, salt, and vinegar. Mix well.

Vegetable Pasta Recipe

  • Finally, it’s time to add macaroni and mix gently, coating the masala sauce and macaroni well. Cook for 2 minutes and keep stirring often.

Indian Pasta Recipe

  • Add some finely chopped green coriander leaves into the masala macaroni and mix gently.

  • Turn off the flame.
  • Finely, Steaming hot Macaroni Pasta or Indian Pasta or Masala Pasta is ready to be served.
