Makai Roti Recipe is a winter special recipe from North India and perfect for a winter lunch or dinner & traditionally served with spiced mustard greens curry aka sarson da saag.


Makai Roti is a bit heavy on the stomach when compared with other roti recipes, so I prefer to add carom seeds (ajwain) in this makai ki roti to help with the digestion. This is totally optional for this recipe.

What is Makki ki Roti

Makki Roti is a corn-based Indian flatbread, made from cornmeal. Makka ki Roti is a North Indian Recipes that is quite popular in the state of Punjab. Traditionally, makki ki roti is prepared by flattening a makka dough ball slightly with your palm in a thumping motion and then cooked on hot tawa.

You can also make makki di roti with some winter special green vegetables like methi (fenugreek), palak (spinach), and bathua (Chenopodium album) to the cornmeal or Makki atta and make parathas and chapatis. I usually make this delicious Makka roti for dinner.

You can serve this delicious Makki chapati with Sarson ka Saag, Dhaba style Aloo Curry, Methi Arbi Sabji, Urad Dal, or any other Sukhi Sabzi Recipes or Curry Recipes.

Makki Ki Roti Benefits

Maize flour is also rich in iron, phosphorous, zinc, and antioxidants. Makki Atta contains a Plethora of vitamins like vitamin A, C, K, and B-complex vitamins. Cornmeal is also rich in iron, phosphorous, zinc, and antioxidants. It regulates blood sugar, is Gluten-free, ​beneficial for pregnant women, Will keep you warm, ​Improves thyroid function. This is also used in a weight loss diet.


Makki atta aka makke ka atta is a gluten-free flour and is easily available in the market throughout the year. But in the winter season, it is even more in demand. You can make roti, paratha, poori, kachori, and even stuffed parathas from this gluten-free flour i.e. makki ka atta.

Makai ki Roti Recipe is a corn-based unleavened flatbread, made from maize flour also known as corn flour or cornmeal or makai atta or makki ka atta in Punjab and generally served with Sarson ka Saag. Makki ki roti can also be served for breakfast with aloo curry and arbi methi sabzi and a hot cup of Chai.

Ingredients
  

  • 2 cup Makai ka Atta or Makka Atta or Maize atta or Corn Meal
  • 1 cup Water (or as required)
  • 2 tbsp Ghee

Instructions
 

  • Firstly, add makki atta or maize flour to a parat.
  • Add a little water at a time and mix it with makke ka atta in a rotating motion from the center of the bowl to outward until it forms a dough and it cleans the sides of the bowl.
  • If the dough becomes sticky then add more makki flour or if the dough is dry then add some water.
  • Further, knead the dough for a few minutes until the dough becomes firm and smooth, with just the right rolling consistency.
  • Knead the dough for a few seconds again (as per the video) to make a ball.
  • Make dough balls, shaping them into a ball and flattening them slightly with your palm.
  • Sprinkle some makai ka atta on the rolling board or chakla. Then place the dough ball on the rolling board.
  • After that sprinkle some maize flour (makki atta) on the dough ball also.
  • Prepare round chapati/roti by patting the dough ball on a rolling board with your hands.
  • First, flatten the dough using your palm, and then roll it into a neat roti using the rolling pin.
  • You can also roll the dough ball by keeping it in between 2 sheets of polythene.
  • Now pick the chapati, pat it in between your hands to shake off the excess flour, and place it on the hot Tawa.
  • In about 1 minute (approx.) the little bubble will start appearing, with the help of a spatula turn the makai ki roti over to the other side and cook for a few seconds.
  • This time this side has to be cooked more than the previous side. you will see brown spots on the makai roti.
  • Further, Cook both sides partially as we will be cooking directly on the flame.
  • Now place the makka roti on the flame directly, and allow it to puff up.
  • Cook the chapatis perfectly as per video or pic or as normal roti recipe.
  • In addition, apply some ghee on the roti.
  • Finally, Makai ki Roti or Makki Ki Roti or Makka Roti is ready to enjoy with sarson ka saag.

Notes

  • First, make sure to knead the maize dough really well, if there are cracks then roti will not puff up.
  • Additionally, if you are not comfortable to cook the chapati on direct flame then you can try to puff up on hot tawa itself.

How to make Makki ki Roti or Makka Roti Recipe with step by step photos:

  • Firstly, add makki atta or maize flour to a parat.
