Simple Paneer Sabzi Recipe | Paneer Bhaji | Quick Paneer ki Sabji Recipe

This quick and simple Paneer Sabzi Recipe is made with paneer (cottage cheese) cubes cooked with basic vegetables like onion, tomato, capsicum, and some Indian spices. Mostly Paneer Recipes (Quick Paneer Sabji Recipe) have a creamy and heavy texture but this makes your dinners light and nutritious and this is a Gluten-Free Paneer Bhaji.

Ingredients

  • Paneer / Cottage Cheese - 200 grams
  • Mustard Oil - 2 tbsp
  • Ginger - 1 inch piece (finely chopped)
  • Garlic - 6-7 cloves (finely chopped)
  • Onions - 2 (chopped)
  • Tomatoes - 2 (chopped)
  • Capsicum - 1 (chopped)
  • Cumin Seeds (Jeera) - ½ tsp
  • Mustard Seeds (Rai) - ¼ tsp
  • Fenugreek Seeds (Methi dana) - ¼ tsp
  • Coriander Powder - 2 tsp
  • Red Chilli Powder - ½ tsp
  • Turmeric Powder - ¼ tsp
  • Fennel Seeds Powder - 1 tsp
  • Garam Masala - ½ tsp
  • Chilli Flakes - ½ tsp
  • Amchur Powder - ½ tsp
  • Tomato Ketchup - 2 tsp
  • Kasuri Methi - 1 tsp (crushed)
  • Salt - 1 tsp (or as per your taste)
  • Water - 1 tbsp
  • Fresh Coriander - 1 tbsp (finely chopped)

Instructions

  • Firstly, chop the vegetables: ginger, garlic, onions, tomatoes, capsicum, and cut the paneer into cubes.
  • Heat 2 tbsp oil in a Wok/Kadai.
  • Add Cumin (Jeera), Mustard Seed (Rai), and Fenugreek Seeds (Methi Dana) and saute them for few seconds.
  • Now add finely chopped garlic and Saute for a minute or till the garlic is light brown.
  • Further, add chopped onions and saute for about 2 minutes on low-medium heat until the onions are translucent. Keep stirring often
  • Now add chopped tomatoes, finely chopped ginger, and salt. Mix well and cover the Kadai/pan with a lid.
  • Cook them for about 2-3 minutes on a medium-low flame till they soften and become pulpy. Keep stirring in between.
  • Further add Turmeric Powder, Red Chilli Powder, Coriander Powder, Fennel Seeds Powder, and mix well.
  • Cover the Kadai/pan with a lid and cook them for about a minute.
  • Give all the ingredients a stir.
  • Add chopped capsicum and 1 tbsp of water and mix well.
  • Cover the Kadai/wok and cook them for 2 minutes on low-medium heat and Keep stirring in between.
  • Further, add Paneer (cottage cheese), Salt, Garam Masala, Amchur Powder, Chilli Flakes, and mix all the ingredients gently.
  • Cook them for a minute.
  • Now add Tomato Ketchup, Kasuri Methi, mix well and cook for about 2-3 minutes on low-medium heat or until the flavours are well absorbed. Keep stirring gently in between.
  • Add chopped fresh coriander and mix well.
  • Garnish this paneer ki sabzi with coriander leaves and serve with roti, naan, or paratha or rolls and enjoy a healthy dinner or lunch.

Notes

  • If you are using store-bought paneer then keep in warm water for 2-3 minutes to retain the softness.
