Ingredients

Hakka Noodles Ingredients:

  • 200 grams Hakka Noodles
  • 2 tbsp Spring Onion (finely chopped)
  • ½ cup Onion (cut into fine long thin strips)
  • ¼ cup Capsicum (cut into fine long thin strips)
  • ¼ cup Carrot (cut into fine long thin strips)
  • ½ cup Cabbage (cut into fine long thin strips)
  • 2 tsp Ginger Garlic Paste
  • 4 tbsp Oil
  • 2 liter Water
  • ½ tsp Ajinomoto / m.s.g (monosodium glutamate)
  • ½ tsp Black Pepper Powder
  • 1 tsp Light Soy Sauce
  • 1 tsp Chili Garlic Sauce
  • 1 tsp Hoisin Sauce (optional)
  • 1 tsp White Vinegar
  • 3 drops Sesame Oil (optional)
  • 2 tsp Salt (adjust as per taste)

Instructions

Instructions for boiling the noodles:

  • Firstly, boil the water in a deep pan.
  • Further, add 1 tsp of salt, and 1 tbsp oil and mix well.
  • After the water comes to a boil then add the noodles.
  • Cook on a medium flame for 8-10 minutes or till the noodles is 90% cooked.
  • Make sure you boil the noodles properly about 90%.
  • Further, drain them and wash the hakka noodles with cold water so that the cooking process is stopped and the excess starch is removed.
  • After washing the noodles with cold water add one tbsp of oil and mix well with your hands.

Instructions for Veg Hakka Noodle Recipe:

  • Firstly, cut the vegetables as mentioned in the veg hakka noodle ingredient section.
  • After that, heat a Kadai / wok and add 2 tbsp of oil.
  • Put on the flame to high.
  • Additionally, add chopped onions and cook the onions for about 2 minutes.
  • Further, add ginger garlic paste and cook for a few seconds.
  • Now add chopped carrot and cook for 2-3 minutes.
  • After that, add chopped capsicum, and cabbage. Saute till the capsicums are half cooked. They should retain the crunch.
  • Now it's time to add noodles, soy sauce, vinegar, chili garlic sauce (if using), m.s.g / Ajinomoto, salt and mix well.
  • Further, add hoisin sauce, and black pepper powder and mix well.
  • Now, add a few drops of sesame oil and add some spring onion. Toss it well and stir fry for 2-3 minutes on high heat.
  • Finally, Restaurant-style Veg Hakka Noodles are ready to be served.
  • Serve this yummy and hot Vegetable Hakka Noodles plain or accompanied with Veg Manchurian curry or hot and sour vegetable sauce.

Notes

  • Firstly, you can also add vegetables as per your choice.
  • Secondly, if you are using mushrooms then the mushrooms have to be chopped fine so that they cook quickly on high heat while stir-frying.
