Vegetable Rava Idli Recipe - Restaurant style or Veg Sooji Idli Recipe is a very popular and quick South Indian breakfast recipe that is very simple to prepare at home. Instant idli made with rava or sooji is soft, light, airy, and spongy in texture. Restaurant-style Vegetable Sooji Idli made with sooji or rava or semolina takes lesser time than the ones made with dal and rice batter. Kids and adults everyone will love its taste.

Ingredients

  • 2 cups Semolina (Rava or Sooji)
  • 1 cup Curd (Yogurt)
  • ½ tsp Baking Soda (or you can add ¾ tsp ENO instead of baking soda)
  • 1 tsp Green Chilli (finely chopped)
  • ½ tsp Ginger Paste
  • 2 piece Tomatoes - round sliced (you can also use capsicum slice)
  • ½ cup Oil
  • 1 tsp Salt
  • ¼ cup Carrot (grated)
  • 1 tbsp Fresh Coriander (finely chopped)
  • 1 tbsp Curry Leaves (finely chopped)
  • 2 tsp Chana Dal
  • 1 tbsp Cashew Nuts
  • 2 tsp Rai (Mustard Seeds)
  • ¼ tsp Asafoetida (Hing)
  • 1 cup Water (adjust as per required)

Instructions

Instructions for Veg Sooji Batter for Idlis:

  • Firstly, take a bowl and add sooji, curd, and salt to it. Mix them well and keep them aside.
  • Further, take a pan and heat 1 tsp oil, and fry the cashews. Remove the fried cashews to the bowl.
  • Now in the same pan, heat 1 tsp oil and splutter the rai (mustard seeds).
  • After that, add chana dal and asafoetida. Fry till the chana dal becomes golden brown.
  • Additionally, add chopped curry leaves and saute for another minute.
  • Add ginger paste, chopped green chilies, and grated carrot, and saute for 2 minutes.
  • Now add this whole mixture to the rava mixture and add chopped coriander leaves.
  • Mix all the ingredients well.
  • Finally, add water as required and make a batter that is neither thin nor thick.
  • Covered and keep aside for 20 mins.

How to make vegetable rava idli recipe:

  • Firstly, After 20 minutes, if the batter looks thick, then add a few tablespoons of water to get a medium consistency.
  • Make sure that the mixture should not either too thick or too thin.
  • Further, take the idli stand and grease the molds well using oil.
  • Heat water in an electric cooker or pressure cooker.
  • It's time to add baking soda/ENO to the batter and mix well.
  • Let the water warm up. Meanwhile, now put around tomato slice in each of the molds.
  • Additionally, pour the rava idli batter into idli molds on top of tomato slices carefully.
  • Now place this idli stand into an electric cooker or pressure cooker and cover the pressure cooker with the lid without the whistle.
  • Steam for 10-12 minutes on medium heat.
  • Open the lid and check whether the idli is cooked properly from the inside.
  • After that, perform a toothpick/knife test. insert a toothpick/knife in the center of the idli. if it comes out clean, your idlis are ready.
  • Further, remove the idli stand from the electric cooker or pressure cooker and let it cool down.
  • Take out each idli from the idli stand with the help of a spoon/knife and put them on a plate.
  • Finally, Vegetable Sooji Idlis are ready. Serve Vegetable Rava idlis with authentic Sambar and 3 types of Coconut chutney.
