10Dry Red Chillies
4tspFenugreek Seeds(Methi)
2tspBlack Peppercorn(Kali Mirch)
2tspTurmeric Powder
4tspUrad Dal
4tspChana Dal

15Curry Leaves
3tspRai(Mustard Seeds)
Instructions
Firstly, heat a non-stick pan.
Further, roast the ingredients coriander, fenugreek, and black peppercorns seeds for 1-2 minutes. Take them out in a bowl.
After that, roast dry red chilies for a few seconds separately in the pan. Take them out in the same bowl.
Now roast curry leaves till they are nice and crisp in the pan. Take them out in the same bowl.
After that, roast the urad dal and chana for 2-3 minutes till they are golden brown.
Further, add rai (mustard seeds) and let them pop.
Place all the above-roasted ingredients into the same bowl and let them cool.
Now add turmeric powder and asafoetida into it and mix well.
Once the above mixture is cooled, blend in a mixer to a fine powder.
Finally, homemade sambhar masala powder is ready for use for making restaurant-style sambar at home.
Use this authentic sambhar masala as required or store it refrigerated in an airtight container.
