Carrot Halwa Recipe a.k.a. Gajar ka Halwa is a popular North Indian dessert, prepared from carrot and khoya and it is especially popular during the winter's season. This is the best recipe for Carrot Halwa without Milk. The best way to announce the arrival of the winter season is by preparing the season's first carrot pudding aka gajar halwa.

Ingredients

  • 2 Kg Carrot / Gajar
  • 1.5 Cup Sugar
  • 1 Cup Khoya / mawa
  • 0.5 Tsp Cardamom powder
  • 20 Cashews / Kaju (chopped)
  • 20 Almonds / Badam (chopped)

Instructions

  • Firstly, rinse, peel the skin of 2 kg carrots, and grate it. You can either grate the carrots with the help of a grater or shred the carrots with the help of a food processor.
  • It is important to buy fresh, tender, and juicy carrots so that they are easily grated.
  • Now heat a heavy wok / kadai on high flame, add grated carrots and saute well.
  • Further, saute for about 2 to 3 minutes and stir well in between.
  • After that add sugar and mix well.
  • Cook for 10 minutes stirring occasionally until the carrots are cooked well and water reduces.
  • Turn the gas to medium flame.
  • Cook for another 10-15 minutes stirring occasionally until the carrots are cooked well and water reduces.
  • Further, cook the carrot pudding completely until the halwa thickens.
  • Now turn off the flame and ½ tsp cardamom powder, 1 cup khoya and mix well.
  • Now add chopped nuts like Cashews, almonds, etc. and mix well.
  • Make sure everything is well combined.
  • Finely, Enjoy delicious homemade Carrot Halwa or Gajar ka Halwa hot or chilled as per your taste.
  • You can also serve this gajar halwa with a scoop of vanilla ice cream. Or Heat 1 tsp ghee in a pan, add gajar ka halwa and some more nuts. Mix well and cook for a minute and serve hot.

Notes

  • It is important to buy fresh, tender, and juicy carrots so that they are easily grated.
  • Also, remember to stir regularly the halwa mixture when you cook it in a wok/Kadai.
