Ingredients

Navratri Potato Curry Ingredients:

  • 6 medium Boiled Potatoes
  • 2 tbsp Oil / Ghee
  • 2 tsp Coriander Powder
  • ¼ tsp Red Chili Powder (optional)
  • ¼ tsp Black Pepper Powder
  • 1 tsp Green Chili (finely chopped)
  • 1 tsp Grated Ginger
  • 5 cups Water (as required)
  • 1 tsp Sendha Namak / Salt (as needed)
  • ½ tsp Homemade Amchur Powder / Lemon Juice
  • 2 tbsp Fresh Coriander (finely chopped)

Instructions

  • Firstly, roughly mashed the boiled potatoes and keep them aside.
  • After that, heat ghee/oil in a pressure cooker.
  • Further, add cumin seeds and let them sizzle.
  • Additionally, add coriander powder, red chili powder, black pepper powder, green chili, and grated ginger and saute for a few seconds.
  • Now, add water as required for boiled potatoes and mix well.
  • After boiling water, add roughly mashed potatoes, and mix well. Adjust the consistency of the water.
  • Further, add sendha namak or rock salt as required.
  • Simmer on a low flame till the aloo gravy thickens a bit and stir in between.
  • After that, add homemade amchur powder or lemon juice in it and mix well.
  • Cook this aloo sabzi for navratri on low flame for a few minutes.
  • When the potato curry for fast or vrat is done then you will see some oil on the top of this sabzi.
  • Now, add finely chopped fresh coriander and mix well all the ingredients.
  • Finally, Vrat wale Aloo is ready and served with Kuttu Paratha, Kuttu Poori, or Kuttu Cheela.

Notes

  • You can thicken the potato curry sabzi less or more as per your taste.
  • The gravy will thicken more when it cools down so adjust the consistency.
