Sabudana Kheer Recipe | How to make sabudana kheer | Tapioca Pearls Pudding Recipe

Ingredients

Sabudana Kheer Ingredients:

  • ½ cup Sabudana / Sago
  • 4 cups Full-Fat Milk
  • ½ cup Sugar
  • ½ tsp Cardamon Powder
  • 2 tbsp Chopped Cashew / Kaju and Almonds
  • 1 tbsp Raisins / Kismis
  • Water as needed

Instructions

  • Firstly, wash the sabudana/sago and soak them for 2 hours in the water in a container.
  • The water level should be just 1 cm above the sabudana in the container.
  • After 2 hours, check them by hand, if still hard keep them soaked for a few hours more.
  • Once they are soft, strain the excess water and keep it aside.
  • Please Note: sabudana comes in different sizes and soaking time may differ.
  • Heat the milk in a heavy-bottomed pan/bhigona.
  • First, boil the milk and after that keep the heat on low-medium and Stir at intervals so that the milk does not scorch from the bottom.
  • Now, add soaked and drained sabudana/sago and cardamom powder.
  • Mix well and cook on low-medium heat for about 10-15 minutes till the sabudana softens and the milk thickens a bit.
  • Stir the kheer in between.
  • Scrape the evaporated milk solids from the sides of pan/bhigona and add to the kheer.
  • Keep in mind that once the sabudana ki kheer cools down, will thicken more. So keep the consistency of sago kheer according to your choice.
  • Additionally, add raisins and mix well.
  • Further, add chopped dry fruits like almonds, and cashews and mix well.
  • Cook for another 4-5 minutes on low flame and stir in between.
  • After that, add sugar and mix well.
  • Cook for a few seconds and stir in between.
  • Scrape the evaporated milk solids from the sides of pan/bhigona and add to the kheer.
  • Finally, delicious and tempting Sabudana Kheer is ready now.
  • Serve Sabudana ki kheer hot or chilled. I personally like the chilled Sabudana Kheer.

Notes

  • Sabudana comes in different sizes that's why soaking time may differ.
