Ingredients

Ingredients for Kuttu Boondi Recipe:

  • 1 cup Kuttu Atta / Buckwheat Flour
  • Water (as required to make the batter)
  • Oil for deep frying
  • ½ tsp Sendha Namak / Rock Salt (adjust as per taste)

Kuttu Boondi Raita Ingredients:

  • 2 cups Curd / Yogurt
  • ½ tsp Sendha Namak (adjust as per taste)
  • ½ tsp Roasted Cumin Powder / Jeera Powder
  • ¼ tsp Red Chili Powder
  • 2 tbsp Fresh Coriander (finely chopped)
  • Water (for soaking the boondi)

Instructions

Instructions for Kuttu Boondi Recipe:

  • Firstly, Take kuttu atta aka buckwheat flour In a mixing bowl and add ½ tsp of sendha namak or rock salt.
  • Further, add water gradually, and make a smooth and medium thick paste.
  • Make sure the kuttu batter is lump-free.
  • Heat enough oil in a Kadai/wok for deep frying.
  • After that, take a big Stainless Steel Skimmer with small holes and pour the batter on top.
  • Slowly tap with the help of a spoon or hand, and make sure the drops of kuttu flour batter fall into the oil.
  • Fry them till they are crisp and golden brown in color.
  • Turn Kuttu Bundi continuously, so that they cook nicely from all sides.
  • Now, take off the kuttu boondi and drain over the kitchen paper towel.
  • Finally, Kuttu Boondi is ready.

Instructions for Kuttu Boondi Raita Recipe for Navratri Fast:

  • Firstly, soak 1 cup of kuttu bundi in enough warm water for 5-8 minutes.
  • Drain off the water from the boondi gently with the help of a strainer and keep them aside.
  • Further, in a bowl take 2 cups of curd/yogurt, and whisk it.
  • Additionally, ½ tsp of roasted cumin powder/jeera powder, ¼ tsp of red chili powder, and ½ tsp of sendha namak/rock salt.
  • After that, mix all the ingredients and make a smooth silky consistency.
  • Add soaked and drained kuttu boondi into the curd mixture and mix well.
  • Also, add 2 tbsp finely chopped fresh coriander and mix well.
  • Finally, Enjoy Kuttu Boondi Raita with khichdi, biryani, and paratha.

Notes

  • Make sure that the curd/yogurt is not sour.
  • Soaking the boondi of kuttu atta in warm water helps to reduce oil.
  • If you want crispy kuttu bundi in raita then avoid soaking them in water and add bundi just before serving.
