First, chop the cauliflower in medium florets.
Secondly, rinse the gobhi and drain the excess water.
Further, Heat enough water in a utensil. Put all the cauliflower pieces in boiling water, and boil for 3-4 minutes.
After that, strain the water from the vegetable with the help of a strainer.
Now, dry the gobi on a thick cloth for 4-5 hours in the sunlight.
When all the water has dried up then put the gobhi in a big bowl.
Additionally, add Mustard Oil, Asafoetida (Hing), Rai (Grounded), Turmeric Powder, Red Chilli Powder, Coriander Powder, and Salt (adjust as per taste).
Mix all the ingredients well.

Now, put the pickle in the sunlight for 3-4 days.
Stir the cauliflower pickle once a day.
