Ingredients

Paratha or Wraps Ingredients:

  • 1 cup Plain Flour / Maida (you can also use wheat flour)
  • ½ tsp Salt (as needed)
  • 1 tbsp Oil
  • ½ cup Warm Water (To knead the dough)

Ingredients for Filling Recipe for Egg Kathi Roll:

  • 1 tbsp Oil
  • 1 tsp Ginger Garlic Paste
  • 2 medium Onions (sliced)
  • ½ cup Capsicum (sliced)
  • 2 cups Cabbage (shredded-drained completely)
  • ½ tsp Vinegar
  • ¼ tsp Black Pepper Powder
  • 1 tsp Soy Sauce
  • ½ tsp Salt (Adjust as per taste)
  • 2 tsp Tomato Sauce
  • 1 tsp Green Chili Sauce
  • 1 tsp Garlic Szechuan Sauce

Egg Roll Ingredients:

  • 8 Eggs
  • ¼ tsp Salt
  • 1 pinch Black Pepper Powder
  • 2 tsp Butter / Oil
  • 1 tbsp Chaat Masala
  • ½ cup Tomato Sauce
  • 2 tbsp Green Chili Sauce
  • 2 tbsp Garlic Szechuan Sauce
  • 1 medium Onion (sliced)

Instructions

Paratha recipe for egg frankies:

  • Firstly, add plain flour/maida, salt, and oil in a bowl, and mix well.
  • Additionally, add water as required to knead a soft dough and knead the dough for 4-5 minutes.
  • Cover with a moist cloth and keep aside for 30 minutes.
  • After 30 minutes, divide the dough into equal balls.
  • Take one dough ball and roll the dough ball evenly to make a round paratha.
  • Further, place the paratha on a hot tava or griddle.
  • When one side has partly cooked, flip the paratha and drizzle about 1 tsp of oil on the partly cooked part.
  • Now, flip again, and spread some oil on this side too.
  • Press it down with a spatula.
  • Cook the paratha for egg kathi roll from both sides till it turns brown spots appear from both sides.
  • Finally, remove the paratha for egg wrap from the heat.
  • Similarly, repeat the above steps to prepare the rest of the parathas or wraps.

Filling Recipe for Egg Wrap:

  • In a large kadai or wok, heat the oil over medium heat.
  • Further, add sliced onions and ginger garlic paste, and saute for about 2-3 minutes or until the onions become translucent.
  • Add shredded cabbage and sliced capsicum to the wok and continue to saute the vegetables for about 3-4 minutes or until the vegetables are slightly softened.
  • Additionally, add soy sauce, vinegar, m.s.g (monosodium glutamate) or Ajinomoto, salt, and black pepper powder into the veggies and mix well all the ingredients.
  • Make sure don't overcook the vegetables. Turn off the flame.
  • Finally, the vegetable filling for Egg Frankies or Egg Kathi Roll is ready.

Egg Roll | Egg Frankie Recipe:

  • Firstly, take a bowl, and break 2 eggs in it.
  • Add black pepper powder and salt.
  • Whisk well using a fork or whisker.
  • Further, heat a nonstick tawa and grease it with butter/oil.
  • Pour the egg mixture on hot tava and place the cooked paratha/wrap over it and cook for 1-2 minutes on medium flame.
  • After that flip this, and cook for another a minute.
  • Transfer it to a plate and repeat the above steps for another wrap.
  • To assemble the egg rolls, lay a paratha on a plate.
  • Spoon about 2 tablespoons of the cooked vegetable mixture onto the center of the paratha.
  • Further, spread some tomato sauce, green chili sauce, garlic Szechuan sauce, and some chaat masala.
  • After that, add some sliced onion over it and roll the paratha tightly.
  • Similarly, prepare the rest of the egg kathi rolls.
  • Roll into aluminum foil or butter paper covering the egg roll stuffed with vegetables.
  • Finally, serve the egg wraps warm with sweet chili sauce, or any dipping sauce of your choice. Enjoy!!!

Notes

  • Firstly, prepare the paratha/wrap and filling separately. Make the Frankies when ready to serve.
  • Secondly, you can also use a thin tortilla instead of homemade wrap for this egg frankie roll recipe.
