Firstly, mash the potatoes as per the picture.
Secondly, chop the tomatoes and ginger. You can use a handy chopper for this but don’t grind it into the paste.
Turn on the flame and heat a Kadai.
Now add 2 tsp Mustard Oil to the Kadai and heat.
When oil becomes hot, add a pinch of Asafoetida (Hing) and ½ tsp Rai (mustard seeds) and let them splutter for few seconds.
After then add finely chopped tomatoes, ginger and mix well.
Further, Cook them for 3-4 mins on low flame or until they become mushy and stir in between.
Now add red chilli powder, turmeric powder, coriander powder, garam masala.
Mix well and saute for one minute until the spices are well combined with tomatoes.
Now add mashed potatoes, 1 tsp salt or as per taste, ½ tsp Dry Mango Powder (Amchur), and mix well.
Cook the Potato Masala Recipe for Dosa or Rai wale Aloo on low flame for 4-5 minutes and stir in between.
Lastly, add finely chopped coriander leaves and mix well.
Switch off the gas.
