To make Lauki ki Sabji for navratri upvas, first of all, we will take lauki / Bottle Gourd and cut the lauki into small pieces, and wash it.
Firstly, heat Ghee / Oil in a Kadai or pan.
Additionally, add cumin seeds (jeera) and saute for a few seconds.
Once it crackles then add coriander powder, red chili powder, finely chopped green chili, grated ginger, and cook for a few seconds.
Further, add diced Bottle Gourd and sendha namak.
Now add ½ cup water and mix all the ingredients.
Further, cover the Kadai / pan with a lid.
Cook for 10-12 minutes on low flame or until they become mushy.
Stir in between.
Additionally, add homemade amchur powder / lemon juice and mix well.
Cook for another 2-3 minutes on high flame and stir in between.
If the Vrat Wali Lauki Sabzi still looks watery or runny to you, then evaporate the water by cooking it without the lid on high flame and stir in between. This Lauki ki sabji for Navratri fast should not be dry nor watery, just in between.
Further, add finely chopped fresh coriander and mix well.
Now, switch off the flame.
Finally, garnish with a few coriander leaves and serve Navratri special lauki ki sabji hot with Kuttu Paratha or Kuttu Poori or Kuttu Cheela.
