Indian style masala Macaroni Pasta is a mouthwatering pasta dish cooked with a desi Indian twist of masalas and vegetables. This can be served before dinner, in supper and can also be packed in a lunch box for kids.

Ingredients

  • Macaroni elbow-shaped pasta - 2 cup
  • Garlic - 4 cloves (finely chopped)
  • Onion - 2 (finely chopped)
  • Green Chili - ½ tsp (finely chopped)
  • Ginger Paste - 1 tsp
  • Tomato - 2 (finely chopped)
  • Capsicum - 1 (finely chopped)
  • Asafoetida (Hing) - A pinch
  • Oil - 4 tsp
  • Oregano Seasoning - ½ tsp
  • Black Pepper Powder - ¼ tsp
  • Kashmiri Red Chili Powder - ½ tsp
  • Maggi Masala or Garam Masala - ½ tsp
  • Tomato Ketchup - 2 tsp
  • Vinegar - 1 tsp
  • Coriander Leaves - 2 tbsp (finely chopped)
  • Salt - 2 tsp (adjust as per your taste)

Instructions

  • Take 3 ltr of water in any utensil or pan and place it on flame and bring it to a boil.
  • When water starts boiling add 2 tsp oil, 1 tsp salt, and mix well.
  • Further, add 2 cups of macaroni into it and cook for 10 to 12 minutes or till the macaroni is 90% cooked i.e they should have a slight bite to them.
  • Stir at regular intervals to prevent macaroni pasta from sticking at the bottom. (different brands of pasta may vary in size and cooking time)
  • Strain off the macaroni with the help of a strainer.
  • Pour cold water to stop the cooking process, and stir once.
  • Drain and transfer them to a big plate. keep aside.
  • Heat up a Kadai/wok and add 2 tbsps of oil.
  • Once the oil becomes hot add a pinch of Asafoetida (Hing).
  • Further, add 4 small finely chopped garlic cloves and Saute till the garlic is light brown.
  • Now add finely chopped onions and cook on medium-low flame till the onions are translucent and keep stirring often.
  • Further, add 1 tsp ginger paste or freshly grated ginger, ½ tsp green chilli and mix well. Saute them for few seconds.
  • Now add finely chopped tomatoes and mix well.
  • Cook them for 2-3 mins on a medium-low flame till they soften and become pulpy.
  • Now add finely chopped capsicums or any other vegetables, salt, and mix well.
  • Saute the veggies for 2 minutes or till veggies are half cooked.
  • Add red chilli powder, black pepper powder and Maggi masala or garam masala, tomato ketchup, oregano seasoning, salt, and vinegar. Mix well.
  • Finally, it’s time to add macaroni and mix gently, coating the masala sauce and macaroni well. Cook for 2 minutes and keep stirring often.
  • Add some finely chopped green coriander leaves into the masala macaroni and mix gently.
  • Turn off the flame.
  • Finely, Steaming hot Macaroni Pasta or Indian Pasta or Masala Pasta is ready to be served.

Notes

You can add any vegetable as per your taste or choice like carrots, green beans, cauliflower, capsicum, baby corn, broccoli, potatoes, green peas, etc.
