Ingredients

Ingredients for Dosa Filling:

  • 500 grams Cabbage (chopped)
  • 2 medium Onion (chopped)
  • 2 medium Capsicum (julienne cut)
  • 1 tsp Ginger (grated)
  • 8 cloves Garlic (finely chopped)
  • 2 tbsp Oil
  • ½ tsp Kashmiri Red Chilli Powder
  • ¼ tsp Black Pepper Powder
  • 1 tsp Salt (adjust as per taste)
  • 1 tsp Soy Sauce
  • 1 tsp White Vinegar
  • 1 tsp Homemade Chili Garlic Sauce

Ingredients for Spring Roll Dosa:

  • 4 cups Dosa Batter
  • 1 tsp Salt (adjust as per taste)
  • ½ cup Oil (to cook the dosa)

Instructions

Dosa Filling Recipe:

  • Firstly hand-shred the cabbage into bite-sized pieces as per the pic, wash, and thoroughly dry.
  • Cut the onions, bell peppers into julienne style, finely chop the garlic and grate the ginger.
  • Further, heat oil in a wok/kadai on a high flame.
  • Once the oil becomes hot, add chopped garlic cloves and Saute till the garlic is light brown.
  • Further, add chopped onions and saute for about 1-2 minutes on low-medium heat until the onions are translucent. Keep stirring often.
  • Now add grated ginger, chopped cabbage and bell peppers to the kadai.
  • Add red chili powder, Black pepper powder, and salt and give all the ingredients a stir.
  • Cook them for about 2-3 minutes on low-medium heat. Keep stirring in between.
  • Now add soy sauce, vinegar, homemade chili garlic sauce and mix well.
  • Cook them for about 1-2 minutes on high flame until water is evaporated.
  • Make sure that the dosa filling are not overcooked.
  • Transfer the dosa filling or stuffing into a bowl and keep aside.

Spring Dosa | Schezwan Dosa Recipe:

  • Add 1 tsp salt to the batter and mix well.
  • Now, heat a non-stick dosa tawa or a flat pan over medium-high heat.
  • After that sprinkle little water and clean it with a cotton cloth. It is just to bring down the temperature of the tawa.
  • Take a ladleful of dosa batter and pour it into the center of the tawa.
  • Using the back of the ladle, spread the batter in a circular motion to make a thin dosa.
  • Drizzle a little oil around the edges of the dosa and on the top.
  • Cook the dosa until the edges turn golden brown and the bottom is crispy.
  • Spread a portion of the spring dosa filling on the dosa, leaving the sides empty as per the picture.
  • Fold the dosa over the filling from both sides. Press gently to seal.
  • Cook for another minute or until the dosa is crisp and golden brown.
  • Remove the Chinese Dosa from the tawa and repeat the process with the remaining batter and filling.
  • Finally, Serve the Spring Dosa hot with coconut chutney, Chili chutney, and sambar if desired.
  • Cut the dosa into halves or quarters and serve it as a breakfast or snack option.
