ingredients for broad beans aloo sabzi recipe | avarakkai potato veg recipe :

  • potatoes – 3-4 (medium)
  • broad beans – 250 grams
  • cumin seeds (jeera) – 1 tsp
  • asafoetida (hing) – a pinch
  • coriander powder – 2 tsp
  • red chilli powder – ½ tsp
  • turmeric powder – ½ tsp
  • garam masala – ½ tsp
  • mango powder (amchur powder) – ½ tsp
  • salt – to taste
  • oil – 2 tbsp


directions for broad beans aloo sabzi recipe | avarakkai potato veg recipe :

  • remove the stalk from both the ends of broad beans and separate out the threads coming on the sides of broad beans.
  • likewise remove the stalk and thread from both the ends.
  • wash and rinse the beans thoroughly.
  • chop it in 2 cm length pieces.
  • wash, peel the skin and chop potatoes into medium sized cubes.
  • heat oil in a heavy bottomed wok/kadai. when oil is hot, add cumin seeds and asafoetida into it. let them splutter for one minute.
  • now add turmeric powder, coriander powder and red chilli powder and cook for another 1-2 minutes.
  • after sauteing the masala, add chopped potatoes and broad beans. mix well.
  • now add salt, 2-3 tablespoon of water and cook covered on medium heat stirring in between for 10-15 minutes.
  • stirring from time to time until the vegetables become soft.
  • when the aloo and broad beans become soft then add garam masala and mango powder. mix well and cook for another 2-3 minutes on high flame.
  • now switch off the flame.
  • hot broad beans aloo sabzi or avarakkai potato veg is ready to be served. it can served with rotis and parathas.
