How to make bathua raita | bathua ka raita recipe with step by step photos:

  • Firstly, remove the 250 grams of Bathua Leaves from the stem and discard the stem. Wash the Bathua leaves.
  • Add Bathua leaves and 1 cup of water into the pressure cooker.
  • Pressure cook the bathua leaves for one whistle.
  • After one whistle on a high flame, switch OFF the Gas and open the lid after 5-7 minutes.
  • Keep it aside and let it cool.
  • Now grind the 1 cup of bathua leaves to fine paste in the grinder.
  • Take out the bathua paste into a bowl.
  • Now take another bowl and add 2 cups of chilled plain yogurt. Whisk it until smooth and creamy using a wire whisk or hand blender.
  • Mix whisked curd, ½ tsp black salt, and ½ tsp chaat masala into the bathua paste.
  • Mix all the ingredients well.

  • To make a tadka for this, heat ½ tsp oil in a pan on medium flame.
  • After that add a pinch of Asafoetida/Hing and ½ tsp cumin seeds and roast for a few seconds. The cumin seeds will crackle and become crispy.
  • Immediately pour this tadka over the prepared raita and mix well.
  • Finally, garnish the chenopodium yogurt dip with fresh coriander and enjoy Bathua ka Raita with your meal.
